What I know is that there is a large dynamic group of people who are passionate about Iceland, Icelandic Heritage, the Arts, Community Building, Traditional Icelandic Food, Vínarterta, and love Icelandic Lamb. Integrity, authenticity and quality in all those things are of high importance. In particular, individuals evaluate food experiences and products as much for their connection to cherished memories as they are for level of excellence, value and cost. I feel strongly about providing service to this wonderful group of people with whom I share many common interests, and this is why I strive to offer the highest quality culinary and cultural experiences and personalized customer service at the best possible price.
My beliefs have guided me to focus my energy on raising three sons in a rural environment on nutritional food sourced from local farmers and suppliers who meet my standards and more. I am inspired to share what I have learned with a wider audience and so leading the food and cultural activities for Icelandic Canadian Club of Toronto Thorrablot (Þorrablót) for the last ten years has nurtured my interest in creating strong community connections through the cultural and culinary landscape of ancestral customs and food making. I am perpetually intrigued by pioneer traditional Icelandic food sources, methods and technologies that have lasted well over 1000 years. And this has led me to consider that I am indeed one of them. I am a perpetual pioneer. As I continue to explore, experiment and discover more, I find what seems to be an endless thread knitting together the people of Icelandic descent with an ever-evolving optimistic future.
I have been studying at the feet of Vínarterta since 2012, and that mythical cake has taken me on some very interesting adventures. Together we have shared and delved into sagas, songs, historic Norse ancestry, Viking explorations, Western Icelandic Settlements, and interesting unexpected places where love of Icelandicness is thriving. Catering with Vínarterta and Icelandic inspired creations have taken us to festivals, touring Iceland, participation in events across Canada from Newfoundland to Vancouver and south into the United States developing lasting relationships along the way. For 2017, it is my intention to pioneer into the territory of who, where and what we are becoming. In perfect timing, 2017 will be the celebration year of Canada’s 150 Anniversary of Confederation. For example, we are planning the most amazing Thorrablot (Þorrablót) event on April 8, 2017 in Toronto based on this theme. I continue to be impassioned by Vínarterta making, sharing and shipping everywhere. It is a sincere joy. In alignment with creating more joy, I will be offering Registered Icelandic Lamb grown ethically and naturally grass-fed and pasture free ranged in Canada this year. It is currently difficult in Canada to secure a large quantity of Icelandic Lamb from small farmers to meet demand. My first choice is Icelandic Lamb from Iceland, however I am taking a different approach due to the ongoing difficulties experienced with Canadian Food Inspections. I do hope in the future to return to Icelandic Lamb from Iceland.
I would be very pleased if you will support me in this choice to provide fresh frozen Registered Icelandic Lamb from Canadian farms who work to what I consider important considerations of pure breeding, are grass-fed, free-range grazing throughout their life cycle, and where lambs stay pastured with their community. In addition to a variety of fresh frozen lamb, we now have lamb custom smoked and cured in Canada, Icelandic style for my valued customers.
