Winter or Forced Rhubarb is sweeter, more tender and sunny tasting, and redder than summer rhubarb. The sour and bitter flavour doesn’t develop as much without sun to stimulate the chlorophyll in the plant.
The Lennox Farm family has been farming for five generations and growing rhubarb in the winter darkness of barns for three generations. They are the last farm in Ontario, Canada to do so. The winter crop will only be available until May and then they return to growth in the fields. We’re feeling very lucky that this joyous crop is available just 30 minutes away.
We love the berry-like, pretty, pink, and sweet fragrant rhubarb and cranberry filling that is made with forced Rhubarb and without sugar!
There is no added sugar in our jams even though rhubarb is a challenging vegetable (fruit) because of its tart taste. The Oxalic acid of Rhubarb is the same compound that gives spinach, sorrel and chard their flavours. The addition of sweetness is required to balance out the sourness which is why most recipes include the addition of sugar or other fruits or vegetables to balance the flavours.
We’ve developed a unique and surprising recipe for our Vinarterta filling using cranberries to create a nice balance of sweetness to blend with the Rhubarb. The sweetness of Winter Rhubarb takes our jam to the next level along with freshly ground cinnamon, and rhubarb-infused Nordur Arctic Sea Salt.
Sandwiched between the buttery smoothness of our vanilla and almond flavoured Vinarterta cookie-layers it is surprisingly fruity and loveable with a background of umami delishishness.
