Currently available cuts are approximately 1.2-1.3 kg per Leg Shipped Weight. UnCooked. Frozen.

To Cook: Thaw, remove plastic wrapper and keep the mesh netting on the meat. Put in a pot just barely covering with water. Heat up slowly. Bring to a boil and reduce heat to a simmer for no more than 40-60 minutes. The meat will shrink a small amount during cooking. Let cool in cooking water. Wrap well in foil to maintain moisture after boiling and before serving. If serving cold, cook the day before. Wrap well and chill. Slice to serve. Outstanding flavour!
